Iris’s Tip
Ingredients
2 egg whites, at room temperature
1 cup of sugar
1 teaspoon of vanilla extract/Brandy
1/2 teaspoon of salt
1/2 teaspoon of baking soda
1/4 cup of oil
1/2 cup of flour
1/3 cup of cocoa powder
1 cup of chocolate chips
Directions
Preheat your oven to 180 degrees Celcius or 350 degree Fahrenheit.
In an electric mixer, beat the egg whites and salt until foamy, and then slowly add the sugar.
Add the oil and vanilla extract.
Stop the mixer; sift in the flour, cocoa powder, and soda into the bowl, and mix for one more minute.
Gently fold in 1/2 of cup of chocolate chips.
Transfer the batter onto a parchment paper-lined baking pan and flatten the batter to about 1/4 inch in thickness. Sprinkle the remaining chocolate chips on top. Optional: you could sprinkle some kosher salt.
Bake for 20 minutes. Remove from the oven, and using a pizza roller, cut squares. Return to oven for 20 more minutes of baking.
When the brownies have completely cooled, cut with the pizza roller or simply separate with your hands. Optionally: sprinkle some confectioners’ sugar.
