Iris's Asian Salmon and Zucchini Spagetti

 Iris’s Tip 

Prepare all ingredients and prepare just before serving.

 Ingredients 

1LB of salmon cut into bite size chunks

3 spiralized zucchini

2 tablespoons of olive oil

1 Teaspoon of sesame oil

1/2 onion sliced

1/2 cup of chopped green onion divided

5 sliced garlic cloves

Salt, black pepper

Optional -1/2 teaspoons of crushed red chili

1 cup of sweet and chili sauce

1 tablespoons of cornstarch

1 tablespoon of water


 Directions 
  1. Wash and cut the ends of the Zucchini. Place it on the spiralizer and turn to get Zucchini spaghetti.

  2. In a small bowl mix the water and cornstarch and set aside.

  3. In a deep and wide skillet heat the olive oil and sesame oil, add the salmon. Season with salt, black pepper and crushed red chili. Sear for 2 minutes each side, remove from the skillet into a dish.

  4. Add the onion and 1/4 cup of the green onion ( leave the rest to garnish the dish) and sauté until the onions start to brown. Add the garlic, sauté for two minutes and add the spiralized zucchini.

  5. Cook for two minutes add the salmon, sweet and chili sauce.

  6. Toss and add the cornstarch and water mixture. Toss again and turn the heat off.

  7. Garnish with the chopped green onion and serve hot.
