An amazingly flavorful summertime salad, bringing contrasting flavors together perfectly. The best broccoli salad you will ever have!
Iris’s Tip
Dress the salad about an hour before serving and immediately before serving top with the toasted cashews.
Ingredients
Ingredients for the salad:
Freshly chopped broccoli head
1/2 cup of dried cranberries
1/2 cup of toasted cashews, almonds or sunflower seeds
1/2 cup of red onion
1/4 cup of chopped green onion
1/2 cup of chopped celery
Ingredients for the dressing:
3 crushed garlic cloves
3/4 cup of mayonnaise
4 tablespoons of red wine vinegar
3 tablespoons of honey
Black pepper
Salt to season
Directions
1. Combine the chopped broccoli, chopped green onion, chopped red onion and chopped celery in a large bowl.
2. In a separate bowl, whisk together the crushed garlic cloves, mayonnaise, red wine vinegar, honey, salt, and black pepper until smooth and well-combined.
3. An hour before serving, pour the dressing over the salad, toss and refrigerate.
4. Top with the cranberries and toasted cashews and toss thoroughly immediately before serving.
