Iris's Vegan Spelt Flour Challah

Two gorgeous Challot made from spelt flour. The challot have a wonderful nutty flavor and are very soft in texture.
Iris’s Tip
This recipe yields two Challot. It is very important to braid them loosely.
Ingredients
Ingredients for 2 challot:
7 cups of spelt flour (1 kg of white or whole wheat or half of each)
1 teaspoon of baking powder
2 1/2 cups of warm water
2 tablespoons of dry yeast
3 tablespoons sugar/maple /date syrup
1 tablespoon salt
1/4 cup oil
Brush with 2-3 tablespoons of maple or date syrup and a tablespoon of water and sprinkle some sesame or poppy seeds
Directions
1. In the mixer bowl with a dough hook, place the flour, baking powder, sugar, and yeast, and mix for one minute.
2. Add the salt, oil, and water, and mix slowly for about 10 minutes, until a uniform dough is formed.
3. Cover with plastic wrap; proof in a warm place for an hour.
4. Lightly dust your work surface; with a spatula, remove the dough from the bowl, and place onto the floured surface.
5. Divide the dough into 10 equal pieces; cover the pieces of dough with plastic wrap.
6. Roll each piece into a rectangle; roll into a strand, and cover with plastic.
7. Join 5 strands at the top. Lift the right strand and take it over three strands. Lift the left strand and take it over two; twist with the second strand from the left and repeat. (See video.)
8. Place on a parchment paper-lined baking pan. Cover with a light kitchen towel or plastic wrap; allow to rise for an hour.
9. Brush with the syrup and water mix, and sprinkle with sesame or poppy seeds.
10. Bake in a 350 degrees Fahrenheit or 180 degrees Celsius preheated oven for 30-40 minutes, until the challot are golden brown.
