In honor of World Chocolate Day celebrated all over the world on July 7th, I wanted to develop a chocolate cake recipe that will give that WOW! BAM! RICH CHOCOLATY, MELT IN YOUR MOUTH TASTE! The cake had to be very light, fluffy, fudgy, and super moist. And since everyone loves chocolate, I needed everyone to be able to eat it! (Vegans, please forgive me.) So, the cake had to be gluten-free, flourless, and dairy-free. You and your family are going to love this super easy and decadent chocolate cake made from only three ingredients. Happy Chocolate Day everyone.

Use vegan chocolate for a dairy-free cake.
Ingredients
4 large eggs
2 tablespoons of sugar
2 cups of chocolate chips or 350 grams
Optional: a pinch of salt
Directions
1. Place a pot with 2 cups of boiling water over medium heat. Place the bowl of chocolate chips over the pot and stir until the chocolate has melted.
2. Separate the eggs.
3. In the mixer bowl, whisk the egg whites with a pinch of salt; when foamy, add a tablespoon of sugar and whisk for 5 minutes until the egg whites form stiff peaks. Transfer to a bowl.
4. In the mixer bowl, whisk the egg yolks with a tablespoon of sugar until doubled in volume, about 5 minutes.
5. Add the egg whites to the egg yolks in three additions and fold until combined.
6. Fold the melted chocolate into the egg mixture until smooth in texture.
7. Transfer to a greased 8-inch round pan and line with parchment paper.
8. Bake in a 180 degree C or 350 degree F preheated oven for 30-40 minutes. If a wooden toothpick comes out dry, the cake is ready.
9. Allow the cake to come to room temperature; dust with confectioners’ sugar and serve.
