 Iris’s Tip

This recipe welcomes any other nuts instead of almonds and lemon zest instead of the orange zest. You could also drizzle some ganache.

 Ingredients

1 1/4 cups of sugar

3 large eggs

1 teaspoon of almond extract

3 tablespoons of orange juice or Amaretto liqueur

1-2 tablespoons of orange zest

3 cups of flour

1 1/2 teaspoons of baking powder

 Directions
  1. Preheat the oven to 350 degrees Fahrenheit or 180 degrees Celcuis.

  2. In the mixer bowl, whisk together the sugar, eggs, almond extract, orange juice, or liqueur, and orange zest for 5 minutes.

  3. Add the flour; mix until combined.

  4. Add the almonds and mix with a wooden spoon. (The dough should be sticky.)

  5. Divide the dough into 2 parts. Wet your hands with water, and create 2 loaves of dough. Place the dough on a baking sheet lined with parchment paper; bake for 40 minutes.

  6. Take the loaves out of the oven; allow the loaves to cool completely.

  7. Lower the oven to 280 degrees Fayrenheit or 140 degrees Celcius.

  8. With a bread knife, cut the loaves diagonally. See photo below.

  9. Arrange the biscotti on the oven grid, and bake for 20 more minutes; allow to cool and enjoy.
