Almond Crusted Salmon

 Iris’s Tip 
 Ingredients 

1/4 cup of roughly chopped almonds

1/4 cup panko breadcrumbs/gluten-free panko

3 tablespoons chopped dill

Juice and zest from 1 lemon

1/4 teaspoon of salt

1/8 teaspoon of freshly ground black pepper

3 minced garlic cloves

1/2 cup of mayonnaise

1 tablespoon of dijon mustard

1 tablespoon of olive oil

4 salmon fillets (6–8 oz each)

sliced lemons, for serving

 Directions 

1. Preheat the oven to 350 degrees Fahrenheit or 180 degrees Celcius.

2. Place salmon fillets on a baking pan, lined with parchment paper.

3. In a bowl combine the almonds and panko.

4. In another bowl combine all of the sauce ingredients; spread over the salmon fillets.

5. Divide the almond mixture between the salmon fillets and sprinkle over the top of the salmon fillets 

6. Cover the pan with foil, and bake for 15 minutes; remove the foil, and roast for 5 more minutes.

7. Top the salmon fillets with lemon slices, and serve.
