A delicious, moist and very impressive orange cake
Iris’s Tip
An impressive cake that will wow your guests! It can be made dairy-free (Parve).
Ingredients
Ingredients for the cake:
6 eggs
1 cup of sugar
1 teaspoon of vanilla extract
Pinch of salt
1/3 cup oil or 100 grams of melted butter
2 cups flour
1/3 cup of cornstarch
1 tablespoon baking powder
1/2 cup orange juice
1/2 cup coconut milk
Orange zest from 1 orange
Ingredients for the candied oranges: (It is not a must, but it certainly adds beauty to the cake.)
Two oranges, very thinly sliced
3 tablespoons of sugar
1 cup of water
Ingredients for orange syrup:
1 cup of orange juice
3 tablespoons of sugar
Directions
Preheat your oven to 350 degrees Fahrenheit or180 degrees Celcius
If you have decided to decorate the cake with the candied oranges, do it now: In a wide saucepan over medium-low heat, dissolve the sugar in the water; add the sliced oranges, and cook until all the water evaporates.
Sugar syrup: In a small saucepan, cook on low heat (about 10 minutes) a cup of orange juice and three tablespoons of sugar.
Separate the eggs. Place the egg whites into the mixer bowl and the egg yolks into a different bowl.
Begin beating the egg whites with a pinch of salt until foamy; slowly add the sugar, beating until stiff peaks form.
Add the orange juice, coconut milk, oil/melted butter, orange zest and vanilla extract to the egg yolks; mix.
Sift in and fold the flour, cornstarch and baking powder in three additions.
Gently fold in the egg whites to the egg yolk mixture in three additions.
If you have decided to decorate the cake with the candied oranges, arrange them on the bottom and sides of a greased baking (bundt) pan, and pour the cake batter over it.
Bake for 35 to 45 minutes until a wooden toothpick comes out dry. At the end of the baking, drizzle the cake with the orange syrup.
When the cake has cooled, place a serving plate over the baking pan and flip it over.
Remove the baking pan and dust with confections’ sugar.
