Sweet and tangy oven-baked chicken with apple, honey, and cranberry sauce. An extremely delicious and festive dish. Don't tell anyone how easy it is to prepare.
Iris’s Tip
Prepare this delicious dish and bake it, or prepare it ahead of time, refrigerate it for a couple of hours or even up to overnight. Serve hot with white rice and roasted potatoes.
Ingredients
6 chicken leg quarters
6 sliced garlic cloves
2 tablespoons of soy sauce
1/4 cup of oil
1/2 cup of honey
Season to taste with salt, white pepper, black pepper
1/2 teaspoon of cinnamon
1/4 teaspoon of turmeric
1 tablespoon of chicken soup seasoning mix
1 cup of hot water
2 Granny Smith apple cored, cut in half, and thinly sliced
1 can of whole cranberry sauce
1/2 cup of cranberries (fresh or frozen)
Directions
1. Place the chicken leg quarters in a rectangular Pyrex dish and arrange the apples and cranberries over the chicken.
2. Place the whole cranberry sauce, oil, hot water, honey, soy sauce, and garlic in a large bowl and mix well. Season to taste with salt, white pepper, black pepper, cinnamon, turmeric, and chicken soup seasoning mix.
3. Pour over the chicken, cover with aluminum foil. I recommend letting the chicken marinate for a couple of hours and even overnight before baking.
4. Bake in a 400 degrees Fahrenheit or 200 degrees Celcius oven for an hour, remove the aluminum foil, and bake for 20-30 minutes more or until the chicken is completely cooked through.
