Asian Peanut Chicken

Asian inspired dish with a delicious creamy peanut sauce

 Iris’s Tip 

Iris's Asian peanut chicken is great if made with chicken breast too. Serve over rice or noodles 

 Ingredients 

2 LB boneless and skinless chicken thighs


Ingredients for the sauce:

2 tbsp of sesame oil

2 tbsp of oil

1 cup of coconut milk

1/2 cup of peanut butter

4 tablespoons of soy sauce

4 tablespoons of honey

1-2 tablespoons of sriracha

2 tablespoons of rice vinegar

2 tablespoons of lime juice

5 crushed garlic cloves

1 1/2 tablespoons of grated ginger

Season with salt, crushed black pepper, garlic powder, and crushed red pepper


Ingredients for garnish:

1/2 cup of roasted peanuts

3 chopped green onion stalks

3 sliced mini red peppers

1/4 cup of chopped cilantro


 Directions 

1. In a bowl mix all of the sauce ingredients and add the chicken.  Mix so the chicken is coated with the sauce, cover with plastic wrap, and refrigerate for an hour.

2. Place the chicken and the sauce in an oven-safe pan or baking dish and roast in a 400 degrees Fahrenheit / 200 degrees Celsius oven for 30 minutes.

2. Garnish with peanuts, green onion, red pepper, cilantro, and serve hot.
