Berries Cheesecake Mousse

 Ingredients 

Ingredients for the base:

1 1/2 cups of all-purpose flour

200 grams of soft butter ( 14 tablespoons)

1 teaspoon of baking powder

1/2 cup of sugar

1 teaspoon of vanilla extract


Ingredients for the cheese mousse:

2 x 8 oz Philadelphia Cream Cheese

2 1/2 cups of heavy whipping cream

1 tablespoon of lemon zest

3/4 cups of sugar

1 cup of pureed berries

(Purée 2 cups of berries in a food processor without any liquid)

3 tablespoons of instant vanilla pudding

1 teaspoon of vanilla extract

2 teaspoons of gelatin powder

3 tablespoons of water

Ingredients for decorating the cake or you can just decorate with powdered sugar:

1 cup of heavy whipping cream

1/2 cup powdered sugar

1 tablespoon of instant vanilla Pudding


What else do you need?

Berries

Confectioner’s sugar

Required equipment :

Mixer with a wire whip and a flat beater attachments

Round Pan 8 or 9 inches

Rectangular pan

Parchment paper

Spatula

Piping Bag and tip for decorating the cake.

 Directions 

Step 1:

  1. Preheat the oven to 350 degrees Fahrenheit or 180 degrees Celsius.

  2. Mix the gelatin powder and the water in a cup and put it in the refrigerator.

  3. In the mixer bowl with the flat beater attachment mix the butter, vanilla extract, and sugar. Add the flour, baking powder, and mix until a crumbly dough is obtained.

Step 2:

  1. In the mixer bowl with the wire whip attachment, whip two cups of the heavy whipping cream with the sugar and transfer to a bowl.

  2. In the same mixer bowl mix the cream cheese with 1/2 a cup of the heavy whipping cream, the lemon zest, the vanilla extract, and the vanilla instant pudding to a smooth mixture.

  3. Melt the gelatin mass in the microwave for 30 seconds and mix, put it back in the microwave for another 10 seconds and stir again.

  4. Add two large tablespoons of the cream cheese mixture to the gelatin and mix well.

  5. Add the gelatin to the cheese mixture and mix.

  6. In folding movements and in 3 additions, add the berry puree and the heavy whipping cream to the cheese mixture.

Step 3: How to Assemble the cake?

  1. Take the base and crumbs out of the refrigerator. Grease the side of the baking pan and Place strip of parchment paper.

  2. Transfer the cheese mousse and berries to the baking pan. Using a spatula, smooth the cheese mousse.

  3. With a fork crumb the dough and sprinkle over the cake.

  4. You can leave the cake just like.

  5. Sprinkle over powdered sugar or garnish with whipped cream and berries.

  6. Instructions for the Decoration:

  7. In the mixer bowl whip the heavy whipping cream, sugar, and vanilla pudding.

  8. Transfer to a piping bag with a star tip. Pipe as desired and garnish with berries.

  9. Transfer the cake to the refrigerator for a minimum of 4 hours.

  10. The cake is served cold.
