Delicious and Moist Apple Cake

A Delicious, non-dairy, moist, apple, raisin and walnut cake

 Iris’s Tip 
 Ingredients 

3 apples cut into small cubes (You can keep the peel on or off as you wish.)

3 large eggs

1 cups of all-purpose flour

2 teaspoons of baking powder

1/2 cup of oil

3/4 cup of sugar

A pinch of ground cloves

1-2 teaspoons of cinnamon

1/2 cup of raisins

1/2 cup of coarsely ground walnuts

Confectioners' sugar for dusting 


 Directions 


1. In the mixer bowl, whisk the oil and sugar for 2 minutes until smooth.

2. Add the eggs, one after the other, and whisk for 5 more minutes.

3. Sift in the flour, baking powder, cinnamon, and ground cloves and mix until combined.

4. Fold in the apples, raisins and walnuts.

5. Transfer the mixture into a greased and lined 8 inch round baking pan or two loaf pans.

6. Bake in a 180 degree C or 350 degree F preheated oven for about 50 minutes or until a wooden toothpick comes out dry.

7. Cool; dust with confectioners sugar and serve.
