Iris’s Tip
Ingredients make 20 rolls or 30 smaller rolls.
Ingredients
For the rolls:
4 1/2 cups of bread flour
1 1/2 cups of warm milk/water
1 tablespoon of dry yeast
1/4 cup of sugar
1 tablespoon of salt
1/3 cup of butter or 1/4 cup of oil
1 large egg
For the garlic topping :
8 crushed garlic cloves
1/2 -1 cup of melted butter or olive oil
1/2 teaspoon of salt
1/4 - 1/2 cup of chopped parsley
Directions
1. Dissolve the yeast and sugar in the warm milk/water.
2. In the mixer bowl with the dough hook attachment, mix the flour and salt for a minute.
3. Add the butter/oil, egg and yeast mixture; mix for 5 minutes on slow speed and then 5 more minutes on medium speed.
4. Transfer the dough to a greased bowl; cover with plastic wrap. Proof in a warm place for an hour.
5. Dust your work surface with flour; place the dough on it.
6. Divide the dough into 20 equal pieces. Roll each piece into a strand. Tie a knot, and transfer to a lined baking sheet.
7. Cover with a light kitchen towel or plastic wrap; place baking sheet in a warm place to proof for an hour.
8. Mix all of the garlic topping ingredients and brush it on the knots.
9. Bake in a preheated oven 350 degrees Fahrenheit or 180 degrees Celsius for 20 minutes, until the knots are golden brown. Brush again with the remainder of the garlic topping; serve warm.
