Iris’s Healthy and delicious Salmon, Quinoa, and Avocado Bowl

A super easy, healthy, and delicious dish that you and your family will absolutely love.

 Iris’s Tip 

You can add any other vegetable to the quinoa bowl like shredded carrots, edamame, cucumber, and more... The recipe yields 4 servings.

 Ingredients 

Ingredients for making the sauce and the salmon- yields 4 servings:

1 LB of salmon cut into bite-size cubes 1x1 inch

1 1/2 cups of sweet and chili sauce

3 garlic cloves crushed

Season with: salt, white pepper, freshly ground black pepper, sweet paprika, ground ginger, and a little dry chili flakes


Ingredients for making quinoa:

2 cups of dry quinoa

2 cups of water

Season with salt and freshly ground black pepper


Ingredients for the topping:

1-2 Sliced or cubed avocados

Chopped green onion

Chopped cilantro

Sliced lime


 Directions 

1. In a bowl, mix the sweet and chili sauce, crushed garlic, salt, white pepper, freshly ground black pepper, sweet paprika, ginger, and a pinch of chili flakes.

2. Save 1/2 cup of the sauce to pour over the dish when it is ready.

3. Place the salmon cubes in a bowl, and pour over the sauce (not the sauce that we kept aside). Mix well, cover with plastic wrap and refrigerate for about an hour.

4. Soak the quinoa in a bowl with water for about ten minutes, and strain.

5. Preheat your oven to 200 degrees Celsius or 400 degrees Fahrenheit.

6. Place the quinoa, water, salt, and pepper in a pot and bring it to a boil. Lower the heat to simmer for another 15 minutes or until the quinoa is ready. Leave the pot with the lid closed.

7. Chop some cilantro, green onion and slice or cube the avocados.

8. Place the salmon cubes in a sheet pan lined with parchment paper, and bake for about 7-10 minutes.

9. Assembling the dish: In a small individual bowl, place 1/2 a cup of the cooked quinoa, some avocado and baked salmon, top with a little cilantro, chopped green onion, slices of lime, and 1-2 tablespoons of the sauce that we kept aside. Repeat with the other 3 bowls and Enjoy.
