Passover days are no longer the same. No more making Matzah Pizza! Here is a very easy and delicious pizza recipe. From one dough, you can make both pizzas and focaccia.

Ingredients
Dough ingredients for 2 pizzas or 2 focaccia:
1 egg
1 teaspoon of salt
3 tablespoons olive oil
1/2 cups matzo cake meal
3/4 cups of potato starch
1 tablespoon of baking powder
2 1/2 cups of soda water (or 1/4 teaspoon of baking soda and 2 1/2 cups of water)
Pizza sauce ingredients:
3 tablespoons of olive oil
2 cubed tomatoes
2 crushed garlic cloves
2 tablespoons tomato paste,
1 teaspoon of salt
1/2 teaspoon of sugar
1/2 teaspoon of dried basil
1/2 teaspoon of dried oregano.
Directions
In a bowl, mix together the cake meal, potato starch, and baking powder.
In a small saucepan, boil the soda water with the oil and salt. Once boiled, transfer to an electric mixer bowl with the flat beater attachment. If you prefer to make it by hand, transfer to a bowl.
Add the flour mixture and egg, and mix to form a soft dough. The dough will be slightly runny; that's fine.
Place some olive oil in a small bowl. Grease your hands well, and take half the amount of dough you have prepared from the bowl.
For the pizzas:
Make the pizza sauce: Place a little olive oil in a skillet with 2 cubed tomatoes and 2 crushed garlic cloves. Cook for 2 minutes and add 2 tablespoons tomato paste, a teaspoon of salt, half a teaspoon of sugar, basil, and dried oregano.
Brush a baking pan with some olive oil, and then sprinkle with a little matzah meal. Take half of the amount of dough and place in the pan. Shape dough into a 12-inch pizza.
Brush the pizza dough you have shaped with some olive oil and bake for 30 minutes in a preheated oven at 400 degrees Fahrenheit or 200 degrees Celsius.
Remove from the oven and spoon the pizza sauce over the baked dough; sprinkle with mozzarella cheese.
From this point on you’re on your own! Top your pizza with whatever you love on pizza; onions, garlic, tomatoes, olives, etc...
Return to the bottom rack of the oven, and bake for 10 more minutes.
For the Focaccia:
Brush a baking pan with some olive oil, and then sprinkle with a little matzoh meal. Take half the amount of dough and place it on top of the greased pan. Grease your hands a little more, and shape focaccia.
Brush the focaccia generously with olive oil; sprinkle with some rosemary and coarse salt. And again, from here you’re on your own! Put everything you love on the focaccia: onions, sliced garlic, roasted vegetables, and more.
Bake for 40 minutes in a preheated oven at 400 degrees Fahrenheit or 200 degrees Celsius.
