Oats and Seeds Artisan Loaves

Biting into these loaves brings me right back to the years I lived in Johannesburg, South Africa. Iris's Oats and Seeds Artisan Loaves are so so very delicious and so very easy to make. You can mix it all in a bowl with a wooden spoon or use your electric mixer. So what are you waiting for? get the butter ready.....

 Iris’s Tip 

Use whole wheat and splet flour for a nuttier taste. If you are missing one or more of the seeds you could easily replace them with others or use more of the seeds you have. The loaves are best served warm.

 Ingredients 

2 cups of whole wheat flour

2 cups of bread /spelt flour 

1 cup of old fashioned rolled oats

1 tablespoon + 1 teaspoon of dry yeast

1 tablespoon of salt

1 teaspoon of baking powder

3 cups of lukewarm water

1 teaspoon of sugar

2 tablespoon of honey/maple/ date syrup

3 tablespoons of olive oil

1/3 cup of sesame seeds

 1/3 cup of flax seeds

1/3 cup of chia seeds

1/3 cup of pumpkin seeds

1/3 cup of sunflower seeds

 Directions 
  1. Measure and get all of your ingredients ready.

  2. In a bowl or your mixer bowl with a dough hook attachment, mix the water, yeast, sugar, and honey.

  3. In a bowl mix all of the seeds together. set aside 4 tablespoons of the seeds mixture to sprinkle over the top of the loaves.

  4. In another bowl mix the whole wheat flour, bread flour, salt, and baking powder.

  5. Add the flour mixture and oil into the yeast mixture and mix until all combined.

  6. Add the oats and seeds mixture and mix until all combined. The dough will be very sticky.

  7. Transfer into a greased bowl, cover with plastic wrap and allow to rise for 30 minutes.

  8. With a dough-scraper transfer the dough onto a well-floured surface and divide the dough into two equal pieces.

  9. Fold and shape the dough into a loaf and place in a greased loaf pan. Sprinkle with the oats and seeds mixture that you set aside.

  10. Cover with a light kitchen towel and allow it to rise for 30 minutes.

  11. Bake in a 210 degrees Celcius / 410 degrees Fahrenheit for 40-50 minutes.
