Quina, Sweet Potato and Caramelized Onions

A delicious and very easy to make as a hot side dish or serve it cold as a salad

 Iris’s Tip 

I recommend that you use tri-color quinoa, which is a blend of white, red, and black quinoa.

It has a wonderful nutty flavor and a fluffy, crunchy texture.


 Ingredients 

2 cups of uncooked quinoa (I used tri-color quinoa)

2 1/2 cups of water

1 large chopped onion

3 medium-size sweet potato, peeled and cut into small cubes

4 tablespoons of olive oil

Season to taste with salt and freshly ground black pepper and 1/2 a teaspoon of chicken soup seasoning mix.


 Directions 
  1. Rinse the quinoa in a strainer under cold and running water. 

  2. Heat 2 tablespoons of olive oil in a saucepan over medium heat, add the quinoa, and stir for about a minute.

  3. Add the water and bring to a boil.

  4. Add the seasoning, lower the heat, and cook for 20 minutes.

  5. Let stand uncovered for 15 minutes.

  6. Heat 2 tablespoons of olive oil in a wide saucepan over medium heat, add the chopped onion, and caramelize for about 5-7 minutes stirring occasionally.

  7. Add the sweet potatoes cut into small cubes and saute until they are soft.

  8. Add the cooked quinoa and stir. Taste to check the seasoning, adding some salt and pepper if needed.

  9. Serve hot as a side dish or cold as a salad.
