Spinach Soufflé

You can make this delicious souffle dairy or dairy-and-gluten-free. 

Make one souffle or 24 mini souffles for individual serving. 

 Ingredients 

1/2 cup of flour

2 teaspoons of baking powder

6 eggs

1/2 cup water/milk

1/4 cup oil

1 chopped onions

3 chopped scallions

2 cups fresh or frozen spinach

1/2 cup of feta cheese crumbs

1/2 cup of grated cheese (mozzarella, Parmesan, etc.)

Salt, white pepper, freshly ground black pepper, 1 teaspoon of onion soup seasoning mix.

 Directions 
  1. Preheat your oven to 350 degrees Fahrenheit or 180 degrees Celsius.

  2. In the mixer or in a bowl, mix the eggs, flour, baking powder, spices, oil and water.

  3. Add the chopped onion, spinach and feta cheese; mix with a spoon.

  4. Pour the soufflé batter into greased pan.

  5. Bake for about 30- 40 minutes.

  6. The soufflé is ready when a wooden stick comes out dry.
