The recipe makes two large or 6 -8 small pizzas
Ingredients
3 1/2 cups of bread flour
1 teaspoon of sugar
1 tablespoon of dry yeast
2 teaspoons of salt
1 1/2 cups of water
3 tablespoons of olive oil
Grated mozzarella
Pizza sauce
Directions
Place the yeast, sugar, and water in your mixer bowl and stir with a spoon.
Add the flour, salt, and olive oil and mix for 10 minutes.
Place the dough in a greased bowl and cover with plastic wrap.
Place in a warm area, and allow to rise for 15 minutes and up to an hour.
Shape your pizza, place it on a pizza pan or a sheet pan lined with parchment paper, and allow it to rise for 15 minutes and up to 40 minutes.
Spoon your pizza sauce over your dough, sprinkle with mozzarella cheese, and drizzle with a little olive oil. If you would like to add other toppings to your pizza, add it now.
Place your pan on the lower rack of the oven, and bake in 400 degrees fahrenheit/200 degrees celsius for 15 and up to 30 minutes depending on the size of the pizza.

Cut the eggplant into 1/4 inch circles, place them on a parchment paper-lined baking sheet, drizzle with olive oil, sprinkle with salt and black pepper, and roast for 20 minutes. After you have shaped your pizza and it has risen, spoon the sauce over the pizza, place 2-3 eggplant circles, top with shredded mozzarella, dried basil, oregano, and crushed red chili. Drizzle with some olive oil and bake.
