Iris’s Tip
Mixing the chocolate chips in a tablespoon of flour will prevent the chocolate chips from sinking to the bottom of the baking pan.
Ingredients
4 ripe bananas, mashed
3 large eggs
1/3 cup of oil or butter at room temperature
1/4 cup of coconut milk/water/orange juice/apple puree
1/3 cup of sugar
1/3 cup of brown sugar
1/2 teaspoon of cinnamon
2 teaspoons of baking powder
1 2/3 cups of flour
1 cup of chocolate chips mixed with a tablespoon of flour
1 cup of chopped walnuts
1 sliced banana
2 tablespoons of brown sugar
Confectioners’ sugar for dusting over the cake
Directions
In the mixer bowl, whisk the eggs and sugars for 2 minutes, and then add the oil in a slow stream.
Add the milk (juice or water), cinnamon, flour and baking powder; whisk until combined.
Fold in 4 mashed bananas, chocolate chips coated in the flour and walnuts.
Grease a baking pan and sprinkle the bottom of the pan with two tablespoons of brown sugar. Arrange banana slices on the sugar and pour the cake batter over the bananas.
Bake in a 350 degree Fahrenheit or 180 degree Celcius preheated oven, for about 40 minutes. You will know if the cake is ready by testing it with a wooden toothpick; it should come out dry.
Turn the cake over onto your serving dish so that the caramelized bananas show: dust with confectioners’ sugar. Enjoy!
