The Best Japanese Cheesecake

The Yummiest and fluffiest cheesecake everrrrr!!!!! The cake can be made gluten-free too.
Iris’s Tip
Bake in an 8 X 3-inch pot or baking pan.
Take all of the ingredients out of the refrigerator about an hour before you are starting to make the cake. Heat the oven to 200 degrees Celsius/ 395 degrees Fahrenheit for half an hour before you're baking the cake.
Ingredients
6 eggs
4 tablespoons of butter (60 g) at room temperature.
240 grams of Philadelphia cream cheese
1/2 cup of milk (120 ml)
4 tablespoons of sugar and 4 more tablespoons of sugar (total of 120 grams)
3 tablespoons of cornstarch (30 grams)
5 tablespoons of flour (gluten -free flour or cornstarch)
1 teaspoon of vanilla extract
1 tablespoon of lemon or orange zest or both
1/2 teaspoon of lemon juice
Pinch of salt
Directions
1. Preheat the oven to 200 degrees Celsius or 395 degrees Fahrenheit, half an hour before baking the cake.
2. Lightly grease the baking pan with cooking spray, line with baking pan with parchment paper, spread the baking paper with butter generously.
3. Separate the eggs. Place the egg whites into the mixer bowl and the egg yolks into another bowl.
4. Start whisking the egg whites with a pinch of salt until foamy, slowly adding 4 tablespoons of the sugar, and 1/2 teaspoon of lemon juice and continue whisking until you get a firm but not stiff peaks. Transfer to a clean bowl.
5. In the mixer bowl, beat the butter and 4 tablespoons of sugar for about 3 minutes.
6. Add the egg yolks, cheese, milk, lemon zest, vanilla extract, and whisk.
7. Stop the mixer and sift in the flour and cornflour and mix until you get a very smooth batter.
8. In 3 additions gently fold the egg whites to the cheese mixture until you get a very smooth batter.
9. Transfer the batter to the lined baking pan. Line the outside of the pan with foil.
***It is highly recommended!
10. Place the pan with the cheese batter in a larger deep pan, add boiling hot water to create a water bath, place on the bottom rack, and Bake for 15 minutes.
11. After 15 minutes of baking, lower the temperature of the oven to 140 degrees Celsius / 285 degrees Fahrenheit and bake for 40 more minutes.
12. Turn the oven off and leave the cake in the oven for about an hour.
13. Transfer the cake to a serving dish and dust with powdered sugar.
