The Best Tiramisu Cake

Heavenly Italian no-bake Tiramisu cake that is extremely delicious and so very easy to make.

 Iris’s Tip 
 Ingredients 

1 cup of espresso or strong instant coffee

6 tablespoons of Spiced Rum divided (add 3 tablespoons to the coffee and the other 3 to the cheese)

1 to 1 1/2 packs of ladyfinger cookies

6 large egg yolks

1 cup of sugar

16 oz of mascarpone (or use 8 oz of mascarpone and 8 oz cream cheese it works great too)

2 cups of heavy whipping cream

3 tablespoons of unsweetened cocoa powder


9 inch /22 cm round pan or 9x13 pyrex dish


 Directions 
  1.  Place the egg yolks and sugar in your electric mixer bowl and place over a saucepan with simmering water and whisk until the sugar is dissolved, and the egg mixture is lighter in color. It takes about 6-10 minutes. Remove the bowl from the heat and set aside to cool. (The bottom of the bowl should not touch the water)

  2. In a small bowl mix the coffee and the rum. Dip the ladyfinger cookies one at a time and place it in the bottom of your cake pan/dish, creating the first layer. 

  3. Beat together the cheese, rum, and yolk mixture until incorporated into a smooth mixture.

  4. In a separate bowl beat the heavy whipping cream until medium, to almost stiff peaks but not very stiff.

  5. In three addition, fold in the whipped cream and the cheese mixture until incorporated to a smooth mixture.

  6. Spread a third of the cheese mixture over the first layer of the ladyfingers. Dip the ladyfinger cookies one at a time and place on the cheese mixture, creating the second layer. Spread the next third of the cheese mixture on the second ladyfinger layer.

  7. Transfer the rest of the cheese mixture into a piping bag with a round tip and pipe drops.

  8. Refrigerate overnight.

  9. Dust with cocoa powder before serving.
